But I know that it will come soon enough. I just feel kind of sad that I know I won’t be living it up as much as I would like to, with my last few weeks in college. I’m trying to be on top of my classes and I still need to finish my senior project. I’m kind of/sort of hoping insomnia will set in and force me to work on what I need to do. There is still so much material that I need to get through and I don’t really want to give up now. Haha, there’s been so many times that I’ve contemplated skipping class, but I keep realizing that I haven’t done so all quarter. Along with making myself guilty that I might miss a lot and get behind, I end up dragging myself to class. :P Why?! only now, do I do this when I should have been doing so all throughout my college career!
Oh well. I console myself by saying it’s practice for when I start working and that it’ll be more fun to party when there’s really nothing left to worry about.
Ensaymada
The ensaymada is another example of Spanish influence on Filipino cuisine. Originating from the Balearic Islands where it is known as ensaïmada, the Filipino ensaymada has diverted from its Spanish counterpart in that it uses butter instead of lard, and instead of a large, snake-like coil of bread dusted with sugar, the Filipino versions are smaller and for individual consumption, and sprinkled with grated cheese. Soft, rich, and melts-in-your mouth, they’re perfect for breakfast or a light snack with a warm mug of coffee or hot chocolate.
Omygosh these are one of my favorite Filipino treats ever! My mom says that I would always ask for her to bring some ensaymada home after work when I was little. ^_^
